Sorry I haven’t posted anything in a while.  How rude of me.  And people keep looking like I will.  So, I guess I will.

I got my Heelys yesterday.  HA! I have no idea how little kids do it.  I can’t walk without my feet going out from under me and I sure as heck can’t skate with them.  They feel like you are walking on ice.  I’m about 99% positive now that I will break a hip.

Mr. T and I are laying in bed and he brought his squeaky hedgehog to bed.  It’s so cute!  He’s laying and holding it with his paws and he keeps squeaking it.  Squeaky Hedgehog has always been Mr. T’s favorite toy and he is currently on his third.  I’ve never seen an animal more happy than T with Squeaky Hedgehog!

I just bought these sweet Heelys!  Oh yeah.  Now I can skate around Walmart like the little pre-teen boys and cut people off.  Hopefully I don’t fall and break a hip.

Sadie’s Stuffed Shells

1Tbsp Italian Seasoning
3 cloves garlic
15 oz part skim ricotta cheese
15 oz low fat small curd cottage cheese
1/8 c parmesan cheese
3 c shredded mozarella cheese divided
1 egg
1 can spaghetti sauce
One package Jumbo Shells, cooked per package directions

Preheat oven to 375

Mix cottage and ricotta cheese in a mixing bowl. Beat the egg and add to mixture. Press garlic cloves through garlic press into mixture, mix in parmesan, 1/2 of the mozarella, and italian seasoning.

Cover the bottom of a 13×9 pan with spaghetti sauce. Stuff cooked shells with cheese mixture, gently place in pan. After all the shells are stuffed, cover the shells with the remaining sauce. Sprinkle over the remaining cheese. Cook approx 45 min or until cheese is browning and bubbly. Let sit 5-10 before serving.

King of the Blues

BB King  Last night my boyfriend and I had our belated Valentine date.  We went to a BB King concert at the Appleton Performing Arts Center.  I’d never been there before and I didn’t realize how small it was.  We were in the fourth tier center, but the seats were great!  BB King was of course great also.  For an 82 year old man, he sure can still wail on a guitar, and he had none other than Lucille with him.  He talks A LOT too!  The show got long toward the end, but I wouldn’t have missed it for anything.

Racism Today

It never fails to amaze me, the degree of apparently socially acceptable racism I see.  I fortunately was raised to be open minded and accepting of all people no matter who they are, what their lifestyle or background, or what they look like.  (thanks Mom and Dad)  Today I had a meeting with a group of women.  After the meeting we were sitting around and enjoying cocktails.  I don’t remember the comment that started it, but something I overheard one of the women saying made me speak up.  In today’s world, people still believe that other races and nationalities are inferior to us.  Why is it socially acceptable to be racist against Hispanic people?  Tonight I heard comments like, “They should have to speak our language before they come here.  They shouldn’t be able to come into our country until they have a job lined up.  All they do is live off of government welfare programs.”  I pointed out that some people do not have the means of learning English before they come.  How terrifying would total submersion into a different culture be?  But they want a better life for their families.  I reminded these women that when their German ancestors came to Wisconsin they didn’t speak English either.  Isn’t America founded on the idea of freedom and equality?  What red-blooded, proud American could deny that?  Government welfare programs?  That’s funny, I thought they were working the jobs that were “beneath” us and our spouses.  I also reminded them that those people were paying taxes without being able to collect social security or medicare. 

It is so easy for a society born and breed in fortunate conditions to look down on other people, but I have a lot more respect for someone who works hard to create a better life for themselves and their families than someone who does nothing but judge other people.

Good Surprise

Today I purchased a wireless router for my new computer.  It cost me $90.  I installed the software and followed all of the directions perfectly, but I couldn’t get my internet to work.  Finally after much frustration, but not much time, I decided to uninstall the software and just hook up my connection the old way.  Well, that wouldn’t work anymore either.  I called my ISP tech support who told me before anything else to read the numbers from the bottom of the modem.  To my pleasant surprise, the reason the router was not working was that my modem already has a wireless signal.  I never needed to buy the router to begin with.  I hope they let me return it! :)
