1Tbsp Italian Seasoning
3 cloves garlic
15 oz part skim ricotta cheese
15 oz low fat small curd cottage cheese
1/8 c parmesan cheese
3 c shredded mozarella cheese divided
1 egg
1 can spaghetti sauce
One package Jumbo Shells, cooked per package directions
Preheat oven to 375
Mix cottage and ricotta cheese in a mixing bowl. Beat the egg and add to mixture. Press garlic cloves through garlic press into mixture, mix in parmesan, 1/2 of the mozarella, and italian seasoning.
Cover the bottom of a 13×9 pan with spaghetti sauce. Stuff cooked shells with cheese mixture, gently place in pan. After all the shells are stuffed, cover the shells with the remaining sauce. Sprinkle over the remaining cheese. Cook approx 45 min or until cheese is browning and bubbly. Let sit 5-10 before serving.

Here is my Packer Backer Baby Back Rib recipe:
Ribs:
Preheat oven to 350. Place baby back ribs in dish with about 1/4 inch of water. Cover with foil. Bake for 1.5 hrs. Remove ribs, coat with BBQ sauce, re-cover. Reduce heat to 250 and cook for aprox 45 min - 1hr. Enjoy!
Whipped Red Potatoes:
Wash and peel 1/2 bag (aprox 2.5lbs) red potatoes. Cut into quarters. Boil for aprox 1 hour. Remove potatoes to mixing bowl. Add 4 tablespoons of butter, 1/3 cup milk. Mix with electric mixer until smooth. Add salt and pepper to taste.
And top it off with your favorite veggie, such as green beans.

Hahaha! I have to stop laughing so I can type this! Everyone is familiar with US Senator Larry Craig right? You know the guy- Airport bathroom incident? Well, he submitted a recipe for the “Congressional Cookbook” called a Super Tuber. All I can say is check out the recipe. Hahaha- he sticks the weiner in the hole made in the potato? Don’t forget to rub down with butter!  Sounds yummy right? Hahaha! That is so wrong!

My favorite meal of a day is breakfast. Yeah, don’t be jealous, I just had a great breakfast! I ate bacon, eggs (sans yolk), toast, and OJ. YUMMY! Nothing starts my day off better! Don’t hate, if y’all were here I’d a made you some too!

Often on Sundays, I will try a new or alter an old recipe. Sometimes it turns out so-so and sometimes it is GREAT. I’ve decided to start sharing the good ones. The following is one I have “spiced up” a bit. It is Harvest Pumpkin Apple Bread:
What you need:
3c all purpose flour   2tsp baking soda   3c granulated sugar  4 large eggs  1/2c apple juice  2tsp ground cinnamon   1 1/2tsp salt  1/2tsp pumpkin pie spice 1 can pumpkin                1c vegetable oil 1 large baking apple, cored peeled and diced
Preheat the oven to 350. Grease and flour two 9×5 loaf pans. Combine flour, cinnamon, baking soda, and salt in a large bowl. Combine sugar, pumpkin, eggs, vegetable oil, and apple juice in a different bowl. Beat until just blended. Add pumpkin mixture to the flour mixtrue and stir until moistened. Fold in the apple. Spoon batter into prepared loaf pans. Sprinkle with cinnamon and pumpkin pie spice.  Bake for 65-70 minutes or until toothpick comes out clean. Cool in pan on wire rack for 10 minutes, then remove from pan to wire rack to cool completely.Â
